When Luis Morales arrived in the U.S. from Guatemala almost thirty years ago, he was unsure where life would take him. After starting as a busboy, he astered every role in the kitchen, longing to start his own business. Plans for a foodtruck fell through, but a chance encounter inspired him to buy one, naming it Melina's Kitchen after his youngest daughter.
